Garlic Chicken Stir Fry

"A stir fry recipe I developed to suit a family of garlic fans."
Original recipe makes 4 portions
  • 2 tbs peanut oil
  • 6 cloves garlic, minced
  • 1 teaspoon salt
  • 2 onions, thinly sliced
  • 1 cup sliced cabbage
  • 2 cups sugar snap peas
  • 1 cup chicken broth
  • 2 tbsps soy sauce
  • 2 tablespoons white sugar
  • 2 tbs cornstarch
Heat peanut oil in large frying pan or a wok. Immediately stir in 2 cloves when oil starts to smoke. Add 1/2 cup of the broth/water and, cabbage, bell pepper, peas and sweet onions cover.
In a tiny bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar . cornstarch and Add sauce mixture to wok/frying pan and stir until vegetables and chicken are coated with all the sauce that is thickened. Serve instantly, over hot rice if desired.
