Cheeseburger Meatloaf

This meatloaf is very juicy, and the possible number of distinct flavors is as huge as your imagination. I've served with dill pickle chips and done American cheese and mustard. Another one might be Swiss cheese and mushroom .
Authentic recipe makes 8 servings
  • 2 pounds ground beef
  • 3/4 cup fresh bread crumbs
  • 1/2 cup minced onion
  • 2 eggs, beaten
  • 1 1/2 teaspoons ground black pepper
  • 3 cups shredded Cheddar cheese

Preheat oven to 350 degrees F (175 degrees C).
In a big bowl, combine the beef, bread crumbs, onion, eggs, salt and pepper, and mix well. Pat into a 14x18 inch rectangle outside meat mixture on a part of wax paper. Spread cheese on the meat, leaving a 3/4 inch border around the borders. Roll up jelly roll fashion form a pinwheel loaf of bread and to enclose the filling. Press beef in on both ends. Place in a 10x15 inch baking dish.
Bake in the preheated oven 1 hour, or until internal temperature reaches 160 degrees F (70 degrees C).
