Penne Pasta with Spinach and Bacon

"It is a fast light meal. Great for any season and certainly will complement anything."

  • 1 (12 oz) package penne pasta
  • 2 tablespoons olive oil, split
  • Garlic minced
  • 1 (14.5 oz) can diced tomatoes
HOMEWORK:10 minutes/ COOK:15 minutes/ PREPARED IN: 25 minutes 
Bring a big pot of lightly salted water to a boiling point.
Meanwhile, heat 1 tbsp of olive oil in a frying pan over moderate heat. Place bacon in the frying pan, and cook until crispy and browned. Stir in the tomatoes, and cook until warmed through.Put the spinach into a colander, and drain the hot pasta therefore it's wilted. Transport into a sizable serving bowl, and toss together with the tomato and bacon mixture, along with the remaining olive oil.
