Inspiration for this particular recipe came from my roomie. It is a fantastic way to obtain your greens as well as a forgiving recipe! This could readily be fit for 4-6 sides, although I eat it like a primary dish. Don't hesitate to replace different types of greens determined by what is in season, and use routine diced bacon rather than pancetta if wanted.
Fixings
- 2 slices bacon or pancetta, chopped
- 1 1/2 tbs olive oil
- 3 cloves smashed garlic,
- salt to flavor
- 1 (15 oz) can cannellini beans, drained
Directions
Microwave the chopped bacon or pancetta for 3 minutes on high.Over moderate heat, heat the olive oil in a big frying pan. Cook in oil. Partly cover, and cook until the greens start to wilt. Stir in cannellini beans and crispy pancetta. Cook partly covered for 5 more minutes, until the flavors have joined and also the greens are soft.
